Pineapple. Plum. Cocoa. Tamarind. Almond nougat. Unmistakably Ugandan, pulled tropical by the process.
Norman Mukuru has been working in coffee for nearly twenty years. From The Coffee Yard — his drying and receiving centre in the foothills of Mount Elgon — he sources cherry from four districts in eastern Uganda and processes it himself. He's been producing naturals since 2018, refining ferment times and drying schedules with the patience of someone who knows exactly what he's chasing.
This lot is the result of an anaerobic fermentation followed by slow drying at two thousand metres. Sealed cherry, controlled temperature, careful patience. The cup is Ugandan in body but pulled tropical by the process: pineapple and plum at the top, cocoa underneath, tamarind in the finish.
We cupped at 86. Norman's making coffee at the level the best East African farms are aiming for. Worth knowing his name.
