Oscar Chacón Solano owns the Las Lajas farm on the slopes of the Poás volcano. When his father died in 1988, his 50 hectares passed to his six children.
In the early 2000s, Oscar and Francisca Cubillo, the third generation of the family in coffee, began processing their own harvest instead of selling it on, founding the Las Lajas Ecological Benefit.
Natural processing entered the picture almost by accident: a 2006 earthquake knocked out power and water in Sabanilla for so long that traditional washing became impossible, and the family adapted rather than stopped.
