The Chacón family inherited fifty hectares of farmland in Sabanilla de Alajuela in 1988, when their father passed. Six siblings, one decision — keep the farm running, but raise the standard. In the early 2000s, Oscar Chacón and his wife Francisca built their own processing facility, Las Lajas, and stopped selling cherry to middlemen. Twenty years later, they're one of the most respected names in Costa Rican specialty.
The Yellow Diamond process is theirs. Cherry is pulped with all of its mucilage intact, sealed in an anaerobic tank for eighty-four hours, then transferred to raised beds for fifteen to twenty days of careful drying. Everything about it is deliberate. 1,500–1,700 metres. SCA 86.5.
