Sugar cane decaf uses ethyl acetate from fermented sugar cane to strip the caffeine and leave everything else alone. What you taste here is the coffee, not the process.

The lot draws from an average of 85 growers per batch, sourced through the Caficauca Cooperative in Piendamó, Cauca. Established in 1961, Caficauca now represents over 3,000 members farming an average of 1.6 hectares each. The farms sit in the Tabletop of Cauca at 1,800–2,050 metres — fertile volcanic land that has produced specialty coffee alongside a long history of armed conflict. The cooperative has been central to keeping that coffee economy alive.

Castillo, Colombia and Caturra varieties. Fully washed with 16–19 hours fermentation, then dried on parabolic solar dryers for around 10 days. SCA 84.25.
