Taste You Can Actually Point To

Specialty coffee scores 80 or above on the Specialty Coffee Association's 100-point scale, graded blind against aroma, acidity, body, flavour and aftertaste. Mass-market coffee isn't graded this way. It's blended for consistency across huge batches, not for character. Every coffee we roast at Indigo scores 85 or above, and it shows: bright acidity, real sweetness, a cup that tastes like where it came from instead of a generic "coffee" flavour.

Traceability, Not Just a Label

We know which farm TEMPERANCE and COURAGE come from, who grew it, and how it was processed. That's the difference between a bag with a name on it and a bag with a story behind it. Specialty coffee tends to come from smaller farms working through direct trade relationships, not anonymous large-scale supply chains.

Freshness You Can Check

We roast to order in Manchester and ship within days, not months. Every bag carries a roast date, so you know exactly how fresh what you're drinking is. A "best by" date a year out only tells you when it'll spoil, not whether it's still good.

Two Ways In, Then Room to Explore

TEMPERANCE is chocolatey, nutty and balanced, built for people switching off supermarket coffee for the first time. COURAGE is bolder: citrus, redcurrant, tropical fruit, for drinkers who want more happening in the cup. Same 85+ standard, different character. Both rotate origin lot to lot as Carlos sources whatever fits the profile best, so what's actually growing behind the bag changes even though the character stays consistent.
